Butt-Kicking Dipping Sauce

This dipping sauce more than lives up to its name. It's excellent as a companion to gyozas or poured over hot rice.

1 cup of soy sauce
1-2 scallions
1 thumb-sized piece of fresh ginger
1 tablespoon of sesame oil

Mince the scallions and grate the ginger. Put the ginger and soy sauce in a small pan and heat them until steam rises from the top. Remove from the heat and add the scallions and sesame oil. Stir. Serve at any temperature—warm, hot, cold, it's always delicious.
