Google Translate barfs when fed Ottoman Turkish, but it can be useful for translating Ottoman Turkish-to-modern-Turkish dictionaries. The Listen function will pronounce words whether or not the dictionary knows the word.

Institutionum linguæ turcicæ, a Turkish-Latin dictionary by Hieronymus Megiser, 1612

Sesli Sozluk is a modern dictionary that sometimes has Ottoman Turkish-to-modern Turkish definitions toward the bottom of the page.

Tarama Sözlüğü is a scholarly Ottoman Turkish dictionary that not only defines words, it presents instances of usage back to at least the 16th century.

Ottoman-Turkish conversation-grammar; a practical method of learning the Ottoman-Turkish language, by Hagopian, V. H., 1907.

Rudimenta grammatices linguæ turcicæ, by André Du Ryer, 1633. One of the earliest Turkish grammars by a European, but you have to know Latin to use it.
